Mama's Chev Salad



Okay. My Mom makes the most amazing salad ever. & I mean ever. Ask anyone. If she is going to a get together or party, it is just known that she will be bringing salad, because everyone looks forward to it. She makes her own variations, but they are always amazing. I grew up with salad for every meal. & I think I have been kind of spoiled, because I only like her dressing now, no others. When I go to restaurants, nothing compares. I still havn't mastered it. So here it is, to the best of my ability. Try it, you won't regret it. This particular salad is our favorite. Chev as my family nicknamed, or "Goat Cheese Vinaigrette Salad." Chev is just a specific brand of Goat Cheese. Ahem, Yes please.

Salad Ingredients:
1 Bag or 8 oz Spring Mix (Any mix of Arugula, Spinach, Baby Greens)
1 Cup choice of chopped sliced apples, strawberries, cranberries (apples are my fave)
4 oz fresh grated Parmesan cheese
5 oz goat cheese
4 finely chopped green onions
Optional: 1/2 Cup candied walnuts/or pecans
For the Courageous: 1 Cup chopped fennel when in season (make sure these are thinly sliced)

Vinaigrette:
1 Tbsp Dijon Mustard
1/4 Cup White Wine Vinegar
3/4 Cup Olive Oil
Pinch of Salt

How to Make:
Mix all ingredients in a large bowl, toss salad and slowly add in dressing. Be careful not to add too much as the greens can wilt quickly with too much dressing. (Dressing saves well in a mason jar in fridge for multiple days). Pair with a Mimosa of your choice & try not to lick the bowl!
