Cauliflower Crusted Margarita Pizza

I absolutely love Margarita pizza. Well, I love pizza in general. If I had to say one of my top five favorite foods in the whole entire world, pizza would be one of them. It is my number one indulgence. I could have it every night if I had my way, but I absolutely know that having pizza all the time can really do a number on my body! So I decided I would come up with a way to have my pizza (lots of it!) & eat it to. This Cauliflower Crusted Margarita Pizza recipe does just that for me. It is relatively on the healthier side, Gluten Free, & definitely tasty! You can really do just about any kind of pizza on a cauliflower crust; I chose margarita because lets face it: cheese, basil, & tomatoes are the perfect combination. What do you think? 1. Preheat oven to 425 degrees. Take half of a head of cauliflower & remove the stalk. Place cauliflower in food processor until finely chopped, & then microwave chopped cauliflower for 8 min. After cauliflower is heated up, pour chopped cauliflower into a large mixing bowl. Allow to cool so that it is easy to handle (only about 5 min), make sure that there isn't too much moisture from the microwaved cauliflower (you don't want a pool of water in the bowl, if there is one pour this or blot this out), then add Parmesan cheese, & shredded Gouda cheese, along with salt & pepper to the chopped cauliflower.


2. Add 2 eggs to cheese & cauliflower mixture & mix in large bowl until combined, it should reach a slightly sticky but fluffy consistency.


3. How do you want your crust shaped? You can either form the mixture into a rounded pizza shape; you may need a rounded pan, otherwise you can do as we did & line a square pan with parchment paper & then press cauliflower crust mixture into pan (creating a square pizza shape). The parchment paper allows for the crust to not stick to the pan. Once pizza crust is formed into whatever shape you would like, baste minced garlic onto crust along with olive oil & spread evenly. Bake 10-15 min at 425 degrees until crust reaches a slightly crispy consistency. You will see sides start to brown. Take pizza crust out of the oven.


4. Spread pizza sauce of your choice onto crust, shake red pepper flakes if desired for extra spice!


5. Place halved cherry tomatoes, chopped basil, & sliced Mozzarella cheese as desired, put back into oven until cheese is golden brown & or starts to bubble (about 10 min is what it took for us). Cut into square bite size pieces & enjoy!

Cauliflower Crust:
1/2 head of cauliflower (stalk removed)
1/2 Cup shredded Parmesan Cheese
1/2 Cup shredded Gouda Cheese
2 Tsp Salt
2 Tsp Pepper
2 Eggs
2 Cloves Garlic (minced)
1-2 Tbsp Olive Oil

Margarita Pizza Topping:
1/2 can of tomato sauce or pizza sauce of choice
8 halved cherry tomatoes (or desired amount)
6 pieces chopped fresh basil (or desired amount)
2 Large Mozzarella Pearls; Sliced (you can also use shredded if you prefer, about 1 1/2 cups shredded)
