Shredded Buffalo Chicken with Blue Slaw

The weather has been amazing lately & it has me in the mood for outdoor BBQ's & savory summer snacks. This recipe has it all, & is perfect for your next family get together. Not to mention super easy (majority of the recipe involves a slow cooker & leaving it for 4 hours). Jordan was happy I made a large batch. It made for a nice evening dinner on the deck! A slight indulgence, but I did make some substitutions to limit sat. fats.

1. Pour almost all of the bottle of buffalo sauce into the crock pot, along with package of dry ranch greek yogurt, garlic salt, salt, & pepper. Mix together evenly. Place 4 frozen chicken breasts in pot & coat evenly with buffalo mixture. Turn crock pot to high, Let sit for 4 hours. At about the 3 hour mark, check the simmer & turn breasts over to coat again (if you want to leave for longer, just place crock pot on low, it can sit for 6-8 hours).

2. When chicken is fork tender, pull apart chicken with 2 forks until all of it is completely shredded. Place remaining buffalo sauce over the pulled chicken & coat. All of the sauce should almost be completely absorbed into the chicken at this point.

3. To make the slaw: Mix mayo, greek yogurt, apple cider vinegar, salt, & pepper together to form a dressing. Place package of coleslaw mix, green onions, & crumbled blue cheese atop dressing & toss together to form a slaw.

4. Create what you wish! A salad, sandwich, lettuce wrap... to each their own! I made the sandwiches because I knew they would be a hit. Stack bun with shredded chicken, & top with slaw! If that doesn't sound appetizing, have slaw on the side, (the buffalo & blue cheese really compliments one another, but if you don't like blue cheese, I know that some people make it with feta instead). We made home-made sweet potato fries as a side-dish!

Shredded Buffalo Chicken:
4 boneless/skinless frozen chicken breasts
1 full bottle red hot buffalo wing sauce
1 package dry ranch greek yogurt (cuts loads of fat getting greek yogurt vs. regular)
2 Tbsp garlic salt
Pinch of salt & pepper

+I used onion buns, but any bun will do if wanting to use as a sandwich, otherwise it is great on its own laying the coleslaw out and the chicken on top. You can be creative; tortilla wraps, regular bread, lettuce wraps, etc!

Blue Slaw:
1/4 Cup light mayo
2/4 Cup greek yogurt
2 Tbsp apple cider vinegar
1 package coleslaw mix
Pinch of salt & pepper
1 container blue cheese
4 green onions, sliced
